Diana,

I purchased the 16 inch pan for my son, Chris, for his birthday in May. I have forwarded you a photo that Chris sent to us as he and a co-worker, Brent, cooked up paella for their office picnic in San Francisco. Chris is an architect and Brent is a graphic designer at MBT Architecture in S.F. They both enjoy cooking and had the firm purchase the large pan from your company and cooked for everyone. Maybe you could put their photo on your site.
Thanks. I recently made paella for the first time and used your recipe...all 10 guests loved it.

Diana;

I heard that a paste made from the spice CREAM OF TARTER and WHITE VINEGAR cleans stains on aluminum pans. I tried it on my paellera. It works great!! I thought I would pass the tip on to you and hopefully simplify you life a bit.

Hello John and Diana;

Thank you for processing my order so quickly and for being so gracious and friendly on the phone. It was really nice to speak with you and I look forward to doing business and chatting with you in the future. Per our conversation and your request, I will be sending you some files and links demonstrating my work in advertising. I hope you enjoy it. Also per your request, I have included one of my non-seafood paella recipes in this E-mail. In it I use Portuguese chourico and not chorizo. Because of this I do not use paprika as the paella gets more than enough from the Chourico. If you need Portuguese chourico you can find it at: www.chourico.com

Comment on wines for consuming with paella

Hello Paellapan

I am very familiar with Vega Sicilia, is probably one of the best wines in the world without doubt. It is expensive but worth it. There are other wines like Protos, Campo Viejo, Vina Mayor, Pesquera, Alion, 5 Valbuena; This last two are from the same manufaturer of Vega Sicilia with a fraction of price, try to buy years ' 94,' 95,' 96 on all of them and to be a Reserva or even better Gran Reserva. I think that the years ' 99, ' 001 are also good but we will have to wait and see.

There are many other brands, the trick is to select the Reserva and Gran reserva, the Rioja wines are typically drier, and the Ribera del Duero more fruit and aromatic.
Regards.
