Hi, Diana and John!

I just wanted to let you know that the pans arrived in lots of time to be washed and seasoned and the paella was a tremendous success thanks to you two. We had 19 avid fans....so much so that I had to pack up in Tupperware whatever little was left to send a bit home with everyone! I am so glad that I took your advice and just ordered the smaller pans which fit beautifully on my stove. I had made so much, though, that I had to transfer some to a large roasting pan in the oven for the last few minutes. I gave Jim the tinta and the recipe, but he hasn't yet had a chance to try it. He knew exactly what it was and has used it in other dishes. Thank you from Jim Riley, Executive Chef, Lawrence Craig Distinctive Catering and Event Management, Maplewood, NJ. They do all sorts of stuff for Governor Whitman, the U.S. Equestrian Team, and lots of high-end galas. I gave my daughter, Amanda, her own pan after dinner along with a copy of your recipe, some saffron and some of my pimenton. She was thrilled as was her husband who also loves to cook. Hi John & Diana
I just wanted to write a quick note to say that I love my Paella pan. It was a wonderful experience on cooking my first Paella de Diana.  Everyone was full of complements on the dish. The only changes I made with your recipe was that I used homemade chicken stock instead of the chicken bouillon, and I used red bell pepper instead of green, and as I told you I roasted my pepper instead of pimentos.  I also took your advice Diana and cooked it on my Bar-B-Q outside. I froze a little, but it was worth it.  It was a total pleasure meeting the both of you and again thank you for making my first experience with Paella a memorable one.
